This stuff is good
- take 10 medium size potatoes – scrub clean but leave on peeling – boil potatoes until soft ( Knife pokes through potatoes easily)
- take 1 ˝ good size onions and dice up
- take a 46oz jar of “vlasic” polish dill pickles and dice up – and mix up with onions
- take 5 large eggs and separate whites from yolks into separate bowls
- whip egg whites at high speed until thick like shaving cream
- take yokes and break up gently with fork
- using an electric mixer, mix yolks while slowly adding oil. You must add the oil very slow to ensure proper mixing. Add approx 2 cups of oil until the yoke turns to a light yellow and has the consistency of soft pudding.
- Peel potatoes while they are still warm – make sure you remove the eyes on the potatoes.
- Cut the potatoes into 3/8 inch slices and mix in onions and pickles
- Salt and pepper to taste
- Add yellow mayo first and then egg whites, mix in with hands.
- Add a small shot of pickle juice for flavor
- Keep pickle juice until the next day and add if needed (for flavor and to create a wetter potato salad.
