A Winner for Dinner!
- 14 jumbo pasta shells
- 2 cups finely chopped mushrooms
- 1 cup finely chopped spinach
- 1/2 tsp each of basil, oregano and thyme
- 19 oz can tomato sauce (I usually used spiced stuff)
- 1/2 cup grated parmesan cheese
- 1 lb ground turkey
- 2 cloves garlic

- Cook pasta shells in a large pot of rapidly boiling, lightly salted water for 10-12 minutes. Rinse with cold water and set aside.
- In a large skillet over medium-high heat cook turkey, mushrooms and garlic. Stir and separate turkey as it cooks. Cook until moisture evaporates.. 10 minutes or so.
- Add spinach, spices and one cup of tomato sauce. Cook until thickened... 15 minutes or so.
- Remove from heat and stir in cheese.
- Add salt and pepper to taste. I use very little salt and a good amount of pepper but to each their own.
- Let cool for 5-10 minutes.
- Use a spoon to fill pasta shells with the meat mixture. About 2 Tbsp or one heaping cereal spoon is about right.
- Spoon remaining tomato sauce over filled shells.
- Sprinkle with parmesan cheese.
- Bake uncovered in 350 degree oven for 20 minutes or until sauce is bubbling.
- Serves between 1 and 14 people depending on how many they have :-)
